(Zea mays var. saccharatum)
Old-fashioned heirloom sweet corn contains a far different taste sensation than the super sweet hybrids on the market today. They do not contain sugar enhancers, nor the ability to increase sweetness the longer they are picked. The minute non-hybrid sweet corn is picked, it begins replacing its’ sugar molecules with starch in order to enhance the ability to survive off the plant. Old-fashioned varieties have that true old-time corn essence, an incomparable flavour, nice and sweet if eaten relatively soon after picking. Roasted or fresh boiled, sweet corn should be eaten in the milk stage of maturity. So, put the pot on to boil, dash out to the field, pick and shuck your corn, and settle in for a tasty treat that can’t be beat!
