Also known as Dry, Gray, and Field peas. This group of smooth skinned peas are made-up primarily of starch, as opposed to sugar like other varieties. They contain a superior protein and carbohydrate content. Harvested when dry, this pea is perfect for use in soups or stews. Or … frozen in a bag to use as a cold compress on aches and pains.
