Popcorn is a close relative of flint corn, and considered to be the most primitive of corn varieties. When mature the kernels of this variety are hard and dense. Not only is it ornamental, but beneath that cold hard exterior resides a taste sensation catering to even the hardest to please palate. Old-fashioned, heirloom varieties will pop-up smaller than the modern hybrids, but the difference in taste is well worth the reduction in volume. Remember, it is not the hybrid corn itself that contains all the flavour in those microwaveable packs. The “coating” is what provides the majority of the taste. Air-popped heirloom varieties are delicious on their own, without any “coating”, butter, or salt. But seriously folks, who can resist a little melted butter!
