Similar to many other greens, it is the ancient Greeks and Romans who first made mention of the use of kale in their cuisine. In North America, we tend to envision kale as more of an upscale version of the common cabbage. An ornamental plant perhaps, and the last standing vision of colour as our autumn turns into winter. Equally tasty as it is attractive, it’s time to take a second look at our edible landscape.
